To back up SharePoint, you need to purchase one user license. If 50 GB that is included in the user license is not enough, you can purchase extra storage space for the backups.
In the Shield Backup Office 365 Management Portal just add SharePoint to backup (Dashboard -> Configure backup). You don’t need to turn on backups for any users or for any other service.
